Brown Rice Pilaf

Description

A delicious side dish to go with baked chicken or baked fish.


Ingredients

Scale
  • 2 cups of brown rice
  • 4 1/2 cups of fat free chicken broth
  • 4 large carrots chopped
  • 1 medium onion chopped
  • 4 cloves of garlic chopped
  • 3 celery stalks chopped
  • 1 tsp poultry seasoning
  • 1 tsp coriander
  • 1 tsp thyme
  • 2 tsp salt or to taste
  • 1 tablespoon Extra Virgin Olive Oil (or coconut oil)

Instructions

  1. Heat a big cooking pot with the Olive Oil on medium heat.
  2. Chop all vegetables.
  3. Add the vegetables to the heated oil and saute’.
  4. Once the vegetables are tender add the seasoning, salt, and brown rice in and saute’ for 5 minutes.
  5. Pour the chicken broth over the rice and bring a boil.
  6. Turn heat down to low/medium and cover.
  7. Cook for 30 to 45 minutes or until tender and still moist.
