I have been busy this Friday & Saturday! Company and birthday shopping! Oh and Valentine’s! I literally had no time to think of dinner. So I mentally started going over the list of ingredients I had in my fridge… bacon, cabbage, garlic, slivered almonds, zucchini, eggs. STIR FRY!!! Yes!! Easy easy, I can do this at 5:00 in the afternoon! I did use two special items you might not have in your kitchen. A Wok & a Spiralizer. You don’t HAVE to have either. You can make do without for sure! Just get your biggest skillet for the Wok & chop your zucc anyway you want it.
BACON!!! I used the no nitrates no hormones, etc bacon! I LOVE BACON!!! Chop it up & throw it in your heated Wok (with a little sesame oil).
Use the fun Spiralizer and spiral up the zucchini.
Dish it up with some slivered almonds, chives, & a little Sriracha sprinkled on top! Delicious and quick! Did I mention PRETTY?? Add brown rice if you want. If you are following Trim Healthy Mama this dish would be an S because of the BACON!!
ASIAN STIR FRY
serves 6 people
12 oz bacon chopped (preferably no nitrates)
2 tbsp. sesame oil
1/2 cabbage green
1/4 cabbage red
1/3 cup chopped onion
1/2 cup green or red bell peppers
1/2 cup sugar peas
2 chopped or spiraled zucchinis
1/2 cup almonds slivered
1/2 lime squeezed
1 clove of garlic pressed
1 small chunk ginger pressed
2 tsp sweetener
1 tbsp. Sriracha
1/3 cup liquid aminos
1 tbsp. rice vinegar
Chop bacon & add it to the heated Wok with 2 tbsp. Sesame Oil. After bacon has cooked, chop up all your veggies. Add to the Wok. Spiral your zucchini to make zoodles. Add to Wok.
Mix all sauce ingredients together and pour over stir fry. Cook a little longer. Add eggs & stir. Pour slivered almonds over Wok. Dish up with more almonds, Sriracha, & chives.
